Apple tart

This is an adaptation of the first recipe I ever invented all on my ownsome. One day I'll give you that recipe, for now I'm saving it in case there ever is a REAL Itteh Bitteh Kitteh Cafeh someday. However, today I modified it slightly, and here we have Apple Tart.

  • 1.25 C wholewheat flour
  • 1/2 C salted butter, cubed. say 200g.
  • 1/2tsp baking powder
  • about 1/3C ice cold water, use as little as possible
  • 3 medium apples
  • 1/4C honey
  • 2 T butter, melted
  • 1/2 tsp ground cinnamon

Add the cubed butter to the flour and baking power, and slash with knives or a pastry thingy to get the crumbs. Add ice cold water bit by bit till it comes together. Wrap in plastic or put in airtight container in freezer for twenty minutes. Preheat oven to 200C. Roll out dough and put in tart shell. Bake unweighted for 10 minutes.

Peel, core and slice apples. Mix cinnamon, butter and honey well together and toss apples in the mixture. Arrange slices in the tart shell (which is harder than it looks!) and pour remaining liquid over them. If you object to damp crusts, then don't do this. I like the flavour it releases and never expect a fruit tart or pie to be unsoggy on the bottom. Bake for 30 min.
